Aleppo pepper is a spicy paprika that is used as a seasoning especially in Middle Eastern and Mediterranean cuisine. When the pepper pod is ripe, it is dark red in color. Peppers are dried, seeds are removed and the pods are roughly crushed to prepare the seasoning. The pepper is named after the city of Aleppo, located in northern Syria along the Silk Road. Aleppo pepper is now grown in both Syria and Turkey.
